Memorial Day weekend..

We hope everyone out there had a wonderful Memorial Day.  Remembering those that fought for our freedom, and the opportunity to spend a day with loved ones during the "great weather season" of late May !!!

Great it was, for all four of our weddings between Saturday and Sunday.

Oh ya, we were busy, and loved every minute of it.

2 days, 4 events, 4 different locations... Priceless !!!!

THE WEDDING ANNIVERSARY DANCE...

We want to share with you...
One of the sweetest dances or events to take place at a wedding is the "Anniversary Dance."

This is a very special time for all married couples, every age, every generation, to take a turn, together, on the dance floor.

The band or orchestra leader or disc jockey announces for all married couples to join hands and dance.

The newlywed Bride and Groom, also, join in the wonderment...as they are, indeed, Mr. and Mrs., and a married couple, too.

The music begins, and usually, after a few seconds, the emcee will say,
"Anyone married less than twenty-four hours, thank you, you may leave the dance floor."  The exit from the dancing by the Bride and Groom is done to the accompaniment of cheers and fun.

The dancing continues and those married less than five years, less than ten years, fifteen years and on up are thanked for dancing, in five year increments, until one couple...just one very special couple...two beautiful loved ones dancing for years and years, together, are still dancing and are the winners of the Wedding Anniversary Dance...

This is a very sentimental and magical time at a wedding, a very emotional dance.

Although this "event" begins with joy and laughter, especially when "kicking" the newly-married Bride and Groom off the dance floor, there is nary a dry eye in the house at the conclusion of The Wedding Anniversary Dance, as all pay honor to a couple who have been blessed to be together for, perhaps, countless decades of marital bliss....

The emcee will ask this Golden Couple if they have some sage wedding advice for the newlyweds.

A gift is presented to the winners of the Wedding Anniversary Dance, and can be the bridal bouquet or the bride's garter. 
Some couples choose to forego the bouquet or garter toss, and gift them, instead, to the winners of this very special dance.

Some other gift suggestions can be candy, a gift certificate, or picture frame (to include a special photo of the winners with the Bride and Groom).

Brides and Grooms, you can guess who the winners will be from your wedding guest list responses.

Some songs to play for the Wedding Anniversary Dance are: "Let Me Call You Sweetheart", Gene Autry, and so many artists; "Through the Years", Kenny Rogers; "Wonderful Tonight", Eric Clapton; "Remember When", Alan Jackson; "As Time Goes By", Jimmy Durante, Frank Sinatra, Perry Como, Tony Bennett, or Barbra Streisand; "When I'm 64", the Beatles; "I Want To Grow Old With You", Adam Sandler; "I've Had The Time of My Life", Bill Medley; or "Because of You", Tony Bennett.

One very thoughtful Bride and Groom, when sending their wedding invitations, included a small card asking each guest what was 'their song?' and included the songs in their reception music to the delight of all.

A computer-savvy DJ can melt a medley of songs together to play. 

Select a favorite song and discuss the length with your reception music director for the beautiful Wedding Anniversary Dance...

A BEAUTIFUL FALL WEDDING TO REMEMBER AND SHARE...

October is becoming one of the most popular months for weddings. 
In part, this is due to the glorious weather and the wondrous and fragrant flowers that romantically bloom as each couple walk down their aisle of love and enchantment.

Some of the most beautiful, fun, memorable and wonderful weddings have been right at home, and we had the honor and privilege to attend a fabulous and unforgettable one...and we want to share with you, our readers...

This wedding took place during the glorious and golden season of Fall...and perhaps, our planning couples can get some ideas for their own weddings...

Amid the lush and rustic beauty of the magnificent central Pennsylvania countryside, we journeyed over the scenic Seven Mountains to witness a truly loving twosome, Doug and Patti Bair, pledge their eternal vows of love to one another.

In a touching and very private ceremony witnessed by members of their immediate families, tears of joy and happiness flowed during their very sweet, traditional and moving promises of "I DO"...

After the handsome groom kissed his beautiful bride, their precious young nephew, Dakota Bair, proclaimed, "It's time to party all night!" and we sure did party on the spacious and lovely grounds of the Bair estate.

Even Doug and Patti's loveable canine, Sarah Bair, wagged her tail, perpetually, in approval and totally enjoyed the day as she very happily mingled among the guests!

A legion of relations and friends came to celebrate this wonderful union bearing gifts of delectable food to add to the smorgasboard of goodies and oh what a feast it was!

On the grand menu, were:  Aunt Louise's baked golden corn casserole, which did her sweet Mother, Violet's memory, proud; Aunt Mary Lou and Uncle John's 'authentic' Italian lasagna, Aunt Carol's German Potato Salad, just like her beloved Mom used to dazzle her family with; Brother Matt and Jenna's homemade sausage and green peppers in sauce and Italian buns, John and Mark's famous Italian meatballs and foccacia bread and a corucopia of treats from Addison, Harrison and Nathan's parents, and Sister Leslie and Chris, and Sister Maxie and Wade, to add to the bountiful extravaganza!

The awesome and dapper Cubby Bair, Father of the Groom, fabulously lending his 'Ace Bartending' expertise provided the finest in libations for each and every taste.

With the bride and groom being avid Penn State Lions fans, the theme was a wedding tailgate party and the wedding colors were Nittany blue and white.

Even the Lions came through and contributed to the merriment, winning big time, 52-3, for the newly-married Bairs!

Readers, A wedding is a wedding is a wedding and no matter when or where your wedding takes place, or how many are on the guest list, wedding tradition will always take center stage, and the bride and groom and their families go through all of the same wedding motions in planning their Big Day, whether your invitees number 15, 50 0r 500...and the beautiful Bairs wedding was no exception...

The new Mrs. Bair's, "something old" was a family heirloom piece of jewelry from her Mom, tucked into her flowers; "something new" was her beautiful ring, a gift from her Groom, "something borrowed" were earrings from her new Mother-in-Law, Linda, "something blue" was a Penn State garter for her
Groom, Doug, to remove, and a "lucky penny for her shoe" was given to Patti by her new nephew, Dakota, who made certain the shiny copper coin captured the year of Doug and Patti's wedding...2009.

With the melodic strains of "Fight On Penn State," and the "Pennsylvania Polka" in the background, along with music to please all the generations in attendance, so much fun, laughter, frivolity and merriment rang out from every corner of the splendrous Bair estate.

Doug and Patti Bair's wedding day was topped off with a coffee, tea and cocoa bar and s'mores made over a warm fire by the Bair family and enjoyed by all as the newlyweds prepared to sail off on their honeymoon aboard the Royal Princess Cruise Lines to the magnificent islands in the Caribbean.

As evidenced on the faces of the guests, this truly was a celebration where a grand time was enjoyed by all.

GROOM SOUP AND BRIDAL MACARONI

We want to share...


Many brides and grooms like to begin their wedding dinner, whether it be a sit-down or a buffet with Italian Wedding Soup a la Yes, We Cater.


The term "wedding soup" in Italian is..."minestra maritata" ("married soup"), a reference to the fact that green vegetables and meats go well together.


Minestra maritata was long popular in Europe even before pasta became an affordable commodity, though the modern wedding soup is quite a bit lighter than the old European mix, which contained quite a few more meats than just the meatballs of modern Italian-American versions.


Because of its popularity at weddings, Ziti is known as Bridal Macaroni.



Ziti, a tube-shaped pasta cut that is enjoyed the world over, gets its name from the word "zita"—which means a woman who is about to become a bride, or “little girl.”


In the Italian regions of  la Campania, Calabria and Sicily, baked Ziti has long been served at wedding celebration banquets, and this delicious and romantic tradition continues today. 



Ziti is best paired with tomato-based sauces and is often used in baked dishes.

Well, it looks like our Penguins will not be going on to play in a back to back quest for Lord Stanley's treasured championship hockey Cup...

Our thank yous, though, to Mario Lemieux, Sid "the Kid" Crosby and the Pens for another season of edge of our seat thrills!!

We will be back next season in the Igloo cheering you on again after we do some good Pittsburgh cheerleading for the Bucs and the Steelers as well as all the terrific players on our fave high school and college teams.

Yes, We Cater Inc. Bocce Team

The Yes, We Cater Inc. Bocce team begins it's 2010 season on Monday May 17th, 2010.

Wish us luck.  There are 8 teams in the league, and we are one of the youngest.

We have improved over the last 7 years, but never won the championship.  For real, though, some of these Italian guys are 80 years old and playing for 75 years!!!  We've got the "muscle", but this is a delicate sport,  and all our practice does not come close.  However, we've had a breakthrough over the past 2 seasons and this might be the one!

We are hitting the road this week !

Last weekend was a wonderous event...Nathan and Allie were married in Greensburg, and I think the family spent as much attention to the wants, needs and comfort of our staff as they did to their own guests.  Their guest count was 270 strong, and everyone wore a smile from cheek to cheek as long as they were in attendance.  Nathan's father , Tom is the Pastor of the Church in which they were married, and the event felt more like a community celebration, than just a wedding.

As far as "quality" ppl go, they are it !!!

There was a windstorm outside, if you can think back to last saturday, but there was a cradle of love inside the doorway... (Don't try to copy that quote...We will be copyrighting it this week!).

A surprise 70th Birthday party manana, along with a wedding tasting.

Then, Saturday we will be at a farm in
Saxonburg called Armstrong Farms.  What a beautiful place.  There are 3 seperate venues there, and we will be at the newest addition.   An intimate crowd of 110 ppl, all will be enjoying the great outdoors, and the magic of spring season.  I'm sure the older servers (more mature) will have a sweater or jacket for nightfall, as there has been a chill around this saturday.

The bridal Party plans on having a Bonfire and roasting Marshmallows after 10 pm, after the Wedding.  (possibly a beer or two as well?). That place is so cool, as it is a Bed and breakfast as well.  All your favorite people get to spend the weekend with you.

We are so excited!

And, on Sunday, one more tasting...I think the last scheduled one as the season is upon us, and we will be stepping up activities this summer...

Yes, We cater's "No Yell" policy .

We got a call yesterday from a groom asking about our "NO YELL" policy.  That warms my heart that our  standard operating procedures were admired by someone.  At first, it sounded as if he wanted to write about this idea in some publication or imformational article.  It turned out that he was hoping to transfer that rule to his work place...

YWC was started in a happy and non - stressed work environment..  Simple enough, nobody comes to work to get yelled at, plus most of the leadership roles at YWC would never raise their voices, or publicly ridicule or embarass.  If someone should alter their role or activity, we would simply let them know... That's it...

YWC has a "NO YELL" atmosphere...If you go "Gordon Ramsey" on anyone, for any reason...see you !

We let every staffer know from day one about this.  If there are raised voices at your home, leave it there....There are 2 very happy people here trying to have the day of their lives, and we must make that happen.....

So, if anyone ever wants to send this info to Oprah Winfrey or "The View" girls or simply KDKA morning show, we can definately further discuss this idea that we have put into effect.  We would love to elaborate!

We're not the first people to not yell at anyone else, but I am proud that in the environments that we work with the complexity of each and every event, we keep true to it.

(We did once see a groom yell at his new wife at their wedding, but that was almost funny because the bride called the groom -who was outside smoking a cigar-on his cell phone to locate him for their first dance, and all 200 guests were standing and waiting for him to join his bride.).  That was 4 years ago, and a cute memory...... They have since made up !

Loughner Massage center for brides

On occassion, when a Yes, We Cater staffer looks for relief from an action packed weekend, they go to Loughner massage center in Monroeville.  They do great, and most important they handle bridal parties, and showers.  It's a nice touch when planning your wedding to grab the girls and get a few massages.  Ask for Amanda or Trudy, and schedule how many are in your group, and when you will need the service.  They also have Yoga classes, which Amanda Loughner has said can become a nice private party.

Just throwing it out there, it's something different.  Of course somewhere down the line, they also have "pregnancy massages"...but one thing at a time !!!

April Showers, bring May Flowers !!!

April has come and finds it conclusion in a matter of days...
We spread cheers and smiles throughout the land, as always.!
Some corporate events, a few religious milestones, and of course, weddings...

We catered 2 beauties this past weekend along with an awards dinner for the Pgh Food Bank.

Again, our blessings continue as we have this wonderful opportunity (which some declare is a gift) to have our lives placed in a place of anticipation, execution, and ultimate goodness.

We are not Doctors, we do not save lives.
We are not Architects, we do not build permanent structures.
We are not Models, although, John Vallese can be right up there with best of them (Fabio included!).

We, at Yes, We Cater are "Consumption Engineers".  We harness the science of eating which addressed with the proper mood, environment, timing and occassions  equals, in most cases life changing experiences and positive memories which last beyond some lifetimes...
Pretty "hard - core" for a catering company to boast about, but these are just a few statements that were made to our staff over the weekend.

Fridays wedding was wonderous in it's own right...

4:30 PM ceremony in Penn Hills
6 PM plated dinner for 80 of their closest friends and family members,
then, at 8 PM on,  adjourning to the Cocktail reception for 350 plus for all their friends, families, and supporters.
There was a famous news guy there, but i am not familiar with the face or the name, but we kept hearing that "that News Guy with the Blue Eyes is here".
The 3 stage Event was wonderful.  The bride and groom are going to have a wonderful life together and maybe even  some day settle in Ireland.  Irish dancing was co-ordinated and performed by many included the bride and her girls, and groom and his guys.  For us it was like a free Lord of the Dance preview - very impressive.!!!

The reception was held at J. Verno Studios on the Southside, which if you've ever been there, only added to the Wonderland we enjoyed!

Then, saturday was another at the same location...I'm telling you we need some lodging at these Venues.!!!!
This was the highly anticipated fully vegetrian menu.  We had Ravioli stations w/ 3 Chefs making Woddland Mushroom, Gorgonzola and Cheese raviolis to order.  There were 4 wonderous sauces to choose from.  Also, a full dinner station which included vegetarian lasagna w/ asiago cheese and fresh Basil, and approx 20 other items.  Heather, a wonderful staff member of ours was also assisting w/ the Authentic spanish style Paella.  She was dishing out directly from a Paella pan atop burning hot bricks.!!!

The groom was so happy that he kissed so many of our staff, and didn't take any names or numbers.!!!

He and his bride Anna (who was dazed herself all night from the wonderland they developed), should've arrived in Sedona, Arizona today for their weeklong Honeymoon of hiking, relaxing, exploring, and if Anna was paying attention to me at all last night, lifting up rocks in an attempt to find a wild scorpion...
Fun, Fun !

This week we have 2 huge events in greensburg.  One of them is an awards banquet for people who donate their time and energies, and Volunteers.

Again, we are not to familiar with Landscaping or Surgery, but we have been placed in a wonderful position, and we are making the best of it every day !

This weekend...

This weekend, we are catering the "Opening Night" celebration of the spring series of performances for the Pittsburgh Irish Classical Theatre.  Beautiful Dreamers begins this weekend.

A wonderful Wedding, and awesome Bat Mitzvah are to come as well.

A couple begin a life together, a girl becomes a young woman, and 100-200 excited theatre - goers...
What a great job we have.  We love it...

Spring Training is over...it's "GO" time !!!

We just sent out final confirmations on staffing for next weekends weddings and events...

It's been a long and cold winter....

I am sure many of us found ourselves under the weather w/ the flu, colds, fever, and worse.
That is all behind us (except for those allergic to spring and pollen) yikes !!!

It's "GO" time for YWC, Inc.

April 17th (next weekend) is jam packed w/ events for us...
Many of the regulars will be returning and a few new faces will be attending as well.

For all of you ladies out there, invited to our events as guests (50 and over)(and 50 and under) Chef Sergio Maragni will be making Pasta almost every weekend this year!

As previously mentioned,  YANIT will be with us decorating and spreading cheer throughout the land!

If there is a two for one sale, Elias John Vallese might serve up a Polpetis or two as well !!!

J. Verno's Studio was given a make-over this off season, Morning Glory's spring flowers are beginning to blossom, and the Herds at Armstrong farms are moo-ing louder then ever !!!

Happy Easter from YWC, Inc.

Easter weekend is upon is...

We had a fabulous tasting last night (4/2) with a wonderful family...

Their Wedding is going to be New Years Eve, and double as a New Years Eve welcoming and countdown.  There were five ppl in attendance.  Bride, Groom, Mom and the Groom's 2 brothers...
Those brothers can make any beer commercial, re-enact any Chuck Norris or Stallone film and probably outlast any two College kids in any situation (referring to partying!).
They are very much looking forward to the wedding and having fun with / harassing our staff.  The tasting began with an apology for making us work on "Good - Friday".  That prompted an easy response.

  Our staff is comprised of Catholics, Jews and then some...  That allows us to work each and every day of the year.  Rosh Hashonah, No Problem !  Christmas Dinner, No Problem!

As "Easy E" once said at one of Yes, We Caters "Taste Art Live" cooking shows : 24 / 7 / 365 BABY!!!

Anna and Mark's Wedding 04 24 2010

So, today we enjoyed a lovely tasting for Anna and Mark's wedding...
What makes this Wedding stand out is the fact that even though the menu contains over 30 dishes and / or Hord's...It is completely (and utterly) VEGETARIAN.
Greek and med food
Fruit / Cheeseboards / Roasted vegetables
Empanadas w/ Seitan (soy & flour based) "Mock" Beef
Homemade Lasagna w/ Layers of fresh Basil, Marinara, Asiago and Ricotta Cheeses
Mozzarrella Roulades w/ Roasted vegetables and red roasted peppers...
A full ravioli station w/ joining sauces, and the list goes on...
You would not miss the meat at all......For real....
It will be fun to re-create this bounty in April....
We can't wait !!!!!

Happy passover ! And Matzo Brei Recipe

Happy Passover... and Easter to follow......

Yanit will be coming in one day this week to make "Matzo Brei" for the crew (the lucky ones)
Matzo brei is like a scrambled Matzo w/Eggs.

Speaking of Yanit, She will be back decorating with us this wedding season, as will our other event decorators / designers...We've been hoarding decorations to follow this years themes, and color schemes...

The "IN" is light green...Not only do we feel that way, but so do Yanit (one of our Event designers), and Clinton (What Not To Wear).  Stripped Light green and white is even better.... As a matter of fact, our wedding on April 24th, 2010 has that color in their centerpieces.  (These really cool flower looking streams that can double as a street preforming monkey Hat!!!)  Really cool stuff!!!!!!

Matzo brei Recipe:
6 pieces matzo - crumbled into boiling water for 1 minute
strained
then in a lg skillet (or the same pot) add 6 eggs and a little sugar - scramble w/ wooden spoon
Of course, Pam Spray or oil your skillet to avoid Egg sticking!!!!

Top with sprinkled sugar, maple syrup or jam.

April is almost a day away, and we know what follows that, May, June, etc...

We had 2 wonderful tastings today.
The first tasting was fun, and the second one-(Let's just say they brought some wine!).  It's always wonderful when so many people travel across the country for a weekend of "Wedding Planning".

Last night (Thursday March 25th) we catered the monroeville chamber of commerce Business after Hours Reception...  There were so many people networking and transferring referrals, that we kept on hearing about "Polpetis" and "Crustinis" and "mini Spinach & mini Potato Knishes"!  We did it!!!
Our staff did wonderfully, and we made many smiles happen.

As always, whenever bread is served by YWC on the eight days of passover, we equally serve matzo.
Enjoy your Seder, if you will be having the passover seder on Monday and/or Tuesday, and enjoy Gefilte Fish w/ Horseradish, Chicken noodle matzo ball soup, brisket, Hard boiled eggs in saltwater, Choroset, and most important - the last night, at the end, on the way over to Dunkin Donuts!!! Ha !!!

The Yes, we cater Basketball squad is looking for 2 more players to form their Catering League team.
Presently, we check out different parks, slip our way into a 3 on 3 with random players, and do what we do best.  2 additional players will give us a full court team, andf a little VALIDITY!!!

Youngest and oldest...

Our most honorable Chef, Chef Sergio Maragni has competition.  The way society ticks is out w/ the old and in with the new...The difference with Yes, We Cater is the nurturing that you do not see too often nowadays.  Chef Sergio, an older gentleman (to say the least) has agreed to take these 3 very new babies and show them the ropes of Pasta making, stretching and drying.  He plans on filling there bottles with the best quality of Olive Oil, and teach them traditional Italian phrases, in order to prep them for their beginners course of Italian 101.

Chef Sergio is an instructor at a local University, and his biggest test is still to come.
A 32 day old, a 14 day old and a 5 day old.  Sergio will teach  and they will learn the art of Italian cooking and hopefully pay attention long enough to absorb more than just Olive Oil.!!!

Chef sergio has such a head start that it'll take 29 years for all of these kids ages (together), to match that of chef sergio.  But, technique?  Endurance?  charisma?  and most importantly, will any of these 3 kids turn out to look like Alan Alda from Mash?

Sergio is a beacon of hope.  A man of wisdom and good looking to some.  He charms the people, and has a heart of gold...These kids are lucky to have the chance to study under him.  Taylor Rose on her 5th day already made a Marinara sauce.  Even more impressive is that Elias John Vallese already assembled a traditional meat sauce in just his 11 the day of life.  The advancements are just a little too freaky...
Gordon ramsay - if you yell at our kids - watch out!!!  We know a guy named darryl who drinks 2 liter bottles of sodas as if it were a toothpick!!!!

We have alot to learn, and our Journey has begun...Thank you Sergio for your wise and kind words...
Just throwing it out there...  Chef Sergio we love you!!!

We had 2 tastings today at yes, we Cater and the groom, who ate alot of food, almost fell asleep in his chair.  The Groom ate, and ate, and satisfied he was.  We had a great time.  The earlier tasting presented a birthday cake to the groom, and that was their go at a cake tasting. So many surprises, we are lucky to be a part of!

Darnet, Pitt lost..But, another chance !!!

So, with many last minute attempts to catch up, and 3 pointers falling, Pitt fell to Xavier...
So, let's add a bit of an extention to the "March Madness" giveaway.. !!!

This morning Chef Donnie Grebiner and his wife Amanda were blessed with a 6 LB 1 Oz baby Girl.
That's 3 YWC babies in 29 days, and only Chef Justins is still Due.
I don't want to get the name wrong, so we'll post donnie's babies name later...

Jeff wertz is in town this weekend...

YWC Alumn Jeff Wertz is in town this weekend visiting.  He is a YWC "All-Star" from days past.  He is currently deep into his Med School Education.  He goes to shcool in the Philly area, and visits Pgh periodically as he studied undergrad at Pitt.  The last time we saw Jeff was when many of us traveled to Maryland for "Ben Schulmans Bar Mitzvah" 03/2009.

The recipe we've all been waiting for......

Roasted Red Pepper Coulis......A cool, creamy, refreshing texture for the Roasted pepper.

Roast one red pepper (grill - bake in Oven - or Saute)
add a pinch of sugar
and add 1 cup (8 oz.) Sour cream...Blend....

You can use this as a spread for sandwiches, accompaniment for a steak or beef,
or as someone recently mentioned at one of our wonderful march tastings : "drink it with a straw"!

It's that good !!!

Babies are rolling in at Yes, We Cater...

For any of those curious beings out there, the core of Yes, We Cater has become much sweeter !!! Chef  and co-founder, Mark Zablow and his wife Yanit were blessed with a little baby boy on 2/18/2010.  His name is Abe Liam Zablow...very cool, and built with a butt to hang in a harness while daddy prepares the "traditional" 25 dishes for a wedding or any large-scale event.  At the very least he will bring the women to the kitchen to admire his cheeks...

Also, 18 short days later Mr and Mrs Vallese were blessed with a son of their own on 3/8/2010.  The number 18 stands for Chai (for life) in Hebrew.  We just birthed this number twice in a row...coincidence?
I think not!  The next generation is drinking milk every three hours in a "hard-core" catering conditioning regiment.  Chef Donnie and his wife Amanda are due this week and chef Justin and his Fiancee are due in 3 weeks.  That's 4 within 5 weeks...Importance?

Well, if you were aware of any of these pregnancies, no more sitting and waiting - You now know that these blessings are in full effect.  And if you were not aware of these pregnancies, the relevance is that you should not expect your caterers to be rushing off to any delivery rooms this Wedding season.  We are ready for you!  We are in the middle of tasting season, and boy are we having fun.  The weather is changing and that is an "eye opener" and a "breath of fresh air" for all of those OUTDOOR brides...

We knew there was a sun, and that sun will be out on your wedding day.  We are believers, as you should be too!  Gotta go, catering a Women's shabbaton in Oakland in the morning.  But first, baby feeding at 3:30 AM........................................
